These baked egg avocado delights are a simple meal that is packed with nutrition and is quick and easy to prepare. Credit: Cimacolle in Taiwan
1 Large Avocado – soft/ripe. 2 Large Eggs Salt and pepper to taste. ¼ cup cheddar or mozzarella cheese (or both). Grated 1 Red or Green Pepper (Chopped). Cilantro (Chopped) Bacon (Optional) 1 Tbl. spoon chopped spring onion. Black Mamba sauce of your choice (Jalapeno, Peri Peri, Chipotle, Cayenne Chilli or Habanero- (depending on the heat level you require).
Wash and cut the avocados: Slice avocados in half, remove the pit, Spoon 1.5-2 tablespoons (21-28 g) of avocado flesh out of the centre, so that you have a well large enough to fit an egg Carefully crack the eggs into the avocado wells: Place the avocado halves cut side up onto a baking dish. Crack an egg into the centre of each, being careful not to break the yolk. Season avocados and egg: Sprinkle with salt and pepper. Bake the avocados: Bake for 7 minutes AT 200°C, then top the egg cooked in avocado with a sprinkle of cheese. Bake again as follows: 5-6 min - Soft boiled Egg 7-8 min – Medium Egg 9-10 min - Hardboiled egg
Sprinkle with chives, chopped Cilantro, diced bell peppers and Bacon (Optional) before serving.
